1 Combine the oil, carob, protein powder, cinnamon, water and essence in a bowl and whisk well. Stir in the ½ cup coconut. Cover and place in the fridge for 30 minutes or until firm.
2 Use a teaspoon to scoop a ball of mixture and then drop into a bowl of shredded coconut. Toss while shaping into a round ball. Place on a tray. Repeat with remaining mixture. Chill in fridge for 30 minutes or until firm.
Makes approx 10 balls
Store in airtight container in refrigerator for up to 4 weeks.
