Ingredients1 large Granny Smith apple, unpeeled, halved, cored, coarsely grated 90g (1 cup) rolled oats 2 tbsp sultanas 2 tbsp fresh lemon juice 250ml (1 cup) soy, rice, almond or oat milk 125ml (½ cup) vanilla soy yoghurt or coconut yoghurt 40g (¼ cup) toasted slivered almonds 2 tbsp pepitas (pumpkin seed kernels) 1/3 cup fresh (or thawed frozen) blueberries or other fresh fruit, to serve | Method1 Combine the apple, oats, sultanas, lemon juice and milk in a bowl. Mix well. Cover and place in the refrigerator overnight to soak. 2 To finish, stir the yoghurt, almonds and pepitas into the oat mixture and spoon into bowls. Top with the fruit and serve.
