Creamy bircher muesli

If you are like Jan and enjoy your porridge over the cooler months. This lovely rolled oat recipe will give you a fabulous option for the warmer months. This recipe is wheat and dairy free and detox friendly.

1 large Granny Smith apple, unpeeled, halved, cored, coarsely grated
90g (1 cup) rolled oats
2 tbsp sultanas
2 tbsp fresh lemon juice
250ml (1 cup) soy, rice or oat milk
125ml (½ cup) vanilla soy yoghurt
40g (¼ cup) slivered almonds, toasted
2 tbsp pepitas
1/3 cup fresh or thawed frozen blueberries or other fresh fruit, to serve

Combine the apple, oats, sultanas, lemon juice and milk in a bowl. Mix well. Cover and place in the refrigerator overnight to soak.
To finish, stir the yoghurt, almonds and pepitas into the oat mixture and spoon into bowls. Top with the fruit and serve.

Serves 2
Muesli mixture will keep for up to 2 days in an airtight container in the refrigerator. Add the nuts and seeds just before serving.
