Echinacea Vegetable Juice

Here is some help for boosting your immune function to ward off viruses. Have this drink daily - it's full of anti-oxidants and vitamin C combined with echinacea tea (Echinacea is a fabulous herb for boosting immune function).

Serves: 1 Prep: 5 mins (+ 10 mins steeping time)

1 echinacea tea bag
60ml (1/4 cup) boiling water
2 carrots
1 red capsicum
1 lime, rind finely grated
Ice cubes (optional)

  1. Place the tea bag in a cup and pour over the boiling water. Cover and set aside for 10 minutes to steep.
  2. Cut the carrot into pieces to fit into a juice extractor. Deseed the capsicum and cut into pieces to fit into the juice extractor. Cut the skin from the lime and cut the flesh in half.
  3. Strain the tea. Process the carrot, capsicum and lime in the extractor and pour into a glass with the tea and lime rind. Add ice cubes if using and stir well before drinking.
