Echinacea Vegetable Juice
Here is some help for boosting your immune function to ward off viruses. Have this drink daily - it's full of anti-oxidants and vitamin C combined with echinacea tea (Echinacea is a fabulous herb for boosting immune function).
Serves: 1 Prep: 5 mins (+ 10 mins steeping time)
1 echinacea tea bag
60ml (1/4 cup) boiling water
2 carrots
1 red capsicum
1 lime, rind finely grated
Ice cubes (optional)
- Place the tea bag in a cup and pour over the boiling water. Cover and set aside for 10 minutes to steep.
- Cut the carrot into pieces to fit into a juice extractor. Deseed the capsicum and cut into pieces to fit into the juice extractor. Cut the skin from the lime and cut the flesh in half.
- Strain the tea. Process the carrot, capsicum and lime in the extractor and pour into a glass with the tea and lime rind. Add ice cubes if using and stir well before drinking.
