Virgin Mary

Serves: 2 Prep: 10 mins

This is a fabulous breakfast drink, or pre-dinner drink. It’s called "virgin" Mary because it is a non-alcoholic version of the "bloody Mary" cocktail. If you’re short on time, you can use 300ml bottled or canned tomato juice in this recipe.

400g ripe tomatoes, chilled
125ml (1/2 cup) water
1 1/2 tbs fresh lemon juice
2 1/2 tsp Worcestershire sauce
Dash Tabasco sauce
Salt & freshly ground pepper
Ice cubes
2 celery sticks with leaves
2 thin slices lemon

1. Process tomatoes through a juice extractor. (Alternatively, place in a blender and blend until pureed. Strain through a sieve into a jug, stirring the puree to remove the juice. Discard the seeds and skin.)

2. Place the tomato juice (you will need 300ml), water, lemon juice, sauce and Tabasco in a cocktail shaker. Season well with salt and pepper. Add ice cubes, cover with the lid and shake well until chilled.

3. Strain the drink into 2 glasses and garnish with celery sticks and lemon slices before serving.
