Carob + Coconut Balls

These balls are absolutely scrumptious and easy to make. They are a great alternative to cacao based treats. Having said that you can use cacao powder instead of carob, but you’ll need to add a natural sweetener such as stevia or Natvia or xylitol to suit your taste.  
Ingredients
  • 1/3 cup melted organic coconut oil
  • ½ cup carob powder
  • ¼ cup collagen protein powder or whey protein powder
  • ¼ tsp ground cinnamon
  • ¼ cup water
  • 1 tsp vanilla essence
  • ½ cup shredded coconut
  • Extra shredded coconut, for tossing
1  Combine the oil, carob, protein powder, cinnamon, water and essence in a bowl and whisk well. Stir in the ½ cup coconut. Cover and place in the fridge for 30 minutes or until firm. 
 
2  Use a teaspoon to scoop a ball of mixture and then drop into a bowl of shredded coconut. Toss while shaping into a round ball. Place on a tray. Repeat with remaining mixture. Chill in fridge for 30 minutes or until firm.  

              
Makes  approx 10 balls
Store in airtight container in refrigerator for up to 4 weeks.
Nutrition per ball: 593kJ (142 cals); 4g protein; 11g fat (9g sat); 11g carbs; 6g sugars; 5g fibre.
