The perfect pairing of spring lamb with spring vegetables is showcased in this recipe. It's best to choose lean lamb and choose broad bean pods that are not too large because the larger one can become a bit floury in texture. 
If you don't eat meat, try marinating slices of tofu instead of the lamb and pan fry the tofu rather than chargrill.

Easy Chicken Soup

A good chicken soup is deliciously nourishing and good for the soul. It's one of my favourite things to have on a cold day. I usually make a large pot of soup and then freeze portion sizes so it can be popped in the fridge to defrost overnight ready to heat up when I'm tired after the day and just want to be nurtured. Team it with a slice or two of keto bread or a seeded bread, if you're extra hungry. It's a family favourite.

Jan's Favourite Lentil Soup

This is an excellent vegetarian soup for lentil lovers. It's so warming for winter meals and can be taken to work in a thermos mug ready to enjoy for lunch. If you don't have brown lentils, use red ones or the French green puy lentils. If you prefer sweet potato, you can swap that for the desiree potatoes. Add extra herbs too if you like and consider topping it with a dollop of basil pesto. Enjoy!

Seeded Keto Loaf

I was inspired to develop this recipe after my partner and I started a low carb diet, and also when a patient shared a recipe for a keto mug muffin. I didn't fancy having to mix up the muffin ingredients every day so I worked on the recipe to create a good loaf that can be kept in the fridge. It's gluten free, dairy free and keto friendly. 
Be sure to use fresh ingredients and store the leftover LSA and almond meal in the fridge to keep them fresh.

Polenta is a meal made from dried corn and makes a very hearty and economical dish that can be flavoured with all manner of herbs and vegetables. 
You can make the polenta a day ahead and cook it close to serving time. I prefer to make my own tomato salsa but if you're pressed for time, buy a good quality salsa to serve with the polenta.

Quinoa (pronounced keen-wah) is a very nutritious gluten-free seed "grain" that originated with the Aztecs. It is a starchy carbohydrate food that supplies some minerals as well and about the same amount of protein as couscous when prepared.
I love the nutty texture and versatility of quinoa and serve it often in the form of a salad or to accompany a hearty casserole.  
​Always rinse quinoa in a sieve under running cold water before cooking to remove slightly bitter compounds it contains when unwashed.

​When you choose to be a vegetarian or if you are including vegetarian meals in your diet, it is important to eat enough protein. Some people become vegetarian by just omitting meat, poultry and fish without replacing them with vegetarian sources of protein. Chickpeas and other legumes are a good vegetarian option and when combined with a grain food such as bread, rice or pasta, make a "complete" protein or one containing all the essential amino acids. These patties are a vegetarian version of Thai fish cakes and have the added bonus of providing good dietary fibre which is great for improving elimination and also helps to reduce high blood cholesterol. Serve with sweet chilli sauce if you like.
