Herb + Lemon Lamb with Spring Vegetables

The perfect pairing of spring lamb with spring vegetables is showcased in this recipe. It's best to choose lean lamb and choose broad bean pods that are not too large because the larger one can become a bit floury in texture.
If you don't eat meat, try marinating slices of tofu instead of the lamb and pan fry the tofu rather than chargrill.

A well  made seafood bisque is so flavoursome and satisfying. I hope you'll enjoy my take on this French classic. It's a lovely soup to serve for entree at your next dinner party. You can make the soup up to end of step 4 on the morning of the dinner party, keep it in the fridge. Continue on from step 5 close to serving. Bon appétit!

This hearty soup is a perfect meal for seafood lovers. You can choose the type of seafood you prefer so feel free to use mussels or scallops instead of the prawns or squid.  You can make the stock using organic vegetable broth powder if you like.

Easy Chicken Soup

A good chicken soup is deliciously nourishing and good for the soul. It's one of my favourite things to have on a cold day. I usually make a large pot of soup and then freeze portion sizes so it can be popped in the fridge to defrost overnight ready to heat up when I'm tired after the day and just want to be nurtured. Team it with a slice or two of keto bread or a seeded bread, if you're extra hungry. It's a family favourite.

Jan's Favourite Lentil Soup

This is an excellent vegetarian soup for lentil lovers. It's so warming for winter meals and can be taken to work in a thermos mug ready to enjoy for lunch. If you don't have brown lentils, use red ones or the French green puy lentils. If you prefer sweet potato, you can swap that for the desiree potatoes. Add extra herbs too if you like and consider topping it with a dollop of basil pesto. Enjoy!

Chilli Garlic Quail with Ginger

Although a little fiddly to eat, quail are absolutely delicious smothered with a hot chilli marinade and baked, grilled or barbecued to perfection. Use less sambal oelek for a milder flavour.
Chicken legs or thighs (with the bone) can be cooked using this
marinade instead of quail. They take about 40 minutes to cook.

Poached Chicken Waldorf

I love poached chicken and the secret is not to overcook the chicken. I use a meat thermometer to check the internal temperature to be sure it's cooked through.
You could also use cold roasted free-range or organic chicken instead if you like.

Legumes such as cannellini and other beans, chickpeas and lentils provide the ideal type of fibre to feed the good bacteria in your digestive system. They are a low glycaemic index (GI) food helping to provide long-lasting energy. And, besides providing the low GI carbohydrate, they also provide a good source of vegetarian protein.
Team them with colourful vegetables as I have here to make a totally nutritious meal or side dish.

Polenta is a meal made from dried corn and makes a very hearty and economical dish that can be flavoured with all manner of herbs and vegetables.
You can make the polenta a day ahead and cook it close to serving time. I prefer to make my own tomato salsa but if you're pressed for time, buy a good quality salsa to serve with the polenta.
