1 lemon, rind finely grated, juiced
1 tbsp chopped fresh sage
2 sprigs fresh thyme
2 tbsp finely chopped fresh ginger
3cm piece cinnamon stick
2 green cardamom pods, lightly crushed
1 garlic clove, sliced
1/2 tsp sliced fresh chilli
1 chamomile tea bag
1 tbsp honey
500ml (2 cups) boiling water
1 Place the lemon rind and juice, sage, thyme, ginger, cinnamon, cardamom, garlic, chilli and tea bag in a coffee plunger or teapot. Add the honey and boiling water and stir.
2 Cover and let the tea steep for 10 minutes before straining and drinking.
Makes 2 cups
